Apple-Scotch Cake


2 Eggs
1 cup oil
1 Tbsp. vanilla
2 cups sugar
2 1/2 cups flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
4 cups peeled apple, chopped.
1 cups chopped pecans or walnuts
1 cup butterscotch chips


Stir together eggs, oil, vanilla. Stir in all dry ingredients.

Stir in apples and nuts.

Batter will be stiff. Spread in greased and floured 9x13” pan. Sprinkle with butterscotch chips.

Bake at 350 degrees for 40 to 45 minutes.
